Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water.

While pasta cooks, fry pancetta in a skillet until crispy. Remove from heat.

In a bowl, whisk egg yolks, whole egg, and Pecorino cheese. Season with black pepper.

Drain pasta and add it to the skillet with pancetta. Toss to combine off heat.

Quickly add the egg mixture, tossing continuously. If too thick, add a little reserved pasta water to create a creamy sauce.

Serve immediately with extra Pecorino and black pepper.
